Here the Catalan culinary tradition rules, enriches and perfects patatas bravas. Sybarites replace the classic tomato sauce (or even worse, ketchup) with a baroque blend which always contains&#13;\n\u201cnyora\u201d dried peppers and the national nut par excellence,&#13;\nthe hazelnut (see recipe). New or baby potatoes are best. There are&#13;\ntricks to keep them super-crispy on the outside and creamy on&#13;\nthe inside. Dunk them in cold water after peeling and cutting&#13;\nthem, and fry them twice, the last time for just a few minutes&#13;\nin very hot oil.&#13;\n<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"el-secreto-esta-en-la-salsa\">The secret is in the sauce<\/h2>\n\n<p>1 \u00f1ora pepper seeded and blanched&#13;\n3 cloves garlic&#13;\n2 guindilla peppers&#13;\n1\/2 litre of extra virgin olive oil&#13;\n1\/2 cup of vinegar&#13;\nsalt to taste&#13;\n1 cup of coffee with cognac&#13;\n100 g toasted hazelnuts&#13;\n5 toasted slices of baguette&#13;\n1.5 small cups of water&#13;\n1 tablespoon of paprika&#13;\nBeat all the ingredients together until the sauce is smooth.&#13;\n<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The emblem of Spanish pubs and bars, patatas bravas are a relatively recent invention from the 1960s which have been attributed to Madrid.
